Vietnamese Spring Rolls (Gỏi Cuốn) are fresh, healthy rice paper rolls filled with shrimp, vermicelli noodles, crisp vegetables, and fragrant herbs. Unlike fried spring rolls, these are served fresh with a delicious peanut dipping sauce or traditional hoisin sauce.

Ingredients
Spring Rolls
- 10 rice paper wrappers
- 1 lb (450 g) shrimp, peeled and deveined
- 4 oz (115 g) rice vermicelli noodles
- 1 cup lettuce leaves, chopped
- 1 cucumber, thinly sliced
- 1 carrot, julienned
- 1 cup bean sprouts
- ½ cup fresh mint leaves
- ½ cup fresh cilantro
- ½ cup Thai basil (optional)
Peanut Dipping Sauce
- ½ cup hoisin sauce
- ¼ cup creamy peanut butter
- 2 tbsp warm water (more if needed)
- 1 tbsp lime juice
- 1 tsp soy sauce
- 1 clove garlic, minced
- Crushed peanuts for topping
Instructions
1. Prepare the fillings
- Cook rice vermicelli according to package instructions.
- Rinse under cold water and drain well.
- Boil shrimp for 2–3 minutes until pink.
- Slice shrimp in half lengthwise if desired.
2. Make the sauce
- Whisk hoisin sauce, peanut butter, warm water, lime juice, soy sauce, and garlic until smooth.
- Adjust thickness with more water if needed.
- Top with crushed peanuts.
3. Assemble the rolls
- Fill a shallow dish with warm water.
- Dip one rice paper wrapper for 5–10 seconds until softened.
- Place wrapper on a clean surface.
- Layer lettuce, noodles, vegetables, herbs, and shrimp.
- Fold sides inward and roll tightly like a burrito.
4. Serve
- Serve immediately with peanut dipping sauce.
