Apple Cake

Instructions
- Prepare the oven and pan.
- Preheat oven to 350°F (175°C).
- Grease and line an 8-inch round cake pan or a loaf pan with parchment paper.
- Mix dry ingredients.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Mix wet ingredients.
- In another bowl, combine plant milk, oil, apple cider vinegar, and vanilla.
- Combine.
- Pour wet ingredients into the dry ingredients.
- Stir gently until just combined.
- Fold in diced apples.
- Add topping (optional).
- Arrange apple slices on top.
- Sprinkle with cinnamon and brown sugar.
- Bake.
- Bake for 40–50 minutes, until a toothpick inserted in the center comes out clean.
- Cool and serve.
- Cool for 15 minutes before slicing.
- Dust with powdered sugar if desired.
