Instructions
1. Prepare the Potatoes
- Wash and thinly slice potatoes (about ⅛-inch thick).
- Do not rinse after slicing—the starch helps create a creamy sauce.
2. Make the Cream Sauce
- Melt butter in a saucepan over medium heat.
- Add garlic and cook for 30 seconds.
- Whisk in flour and cook for 1 minute.
- Slowly whisk in milk and cream.
- Simmer until slightly thickened, about 3–5 minutes.
- Stir in:
- Salt
- Pepper
- Garlic powder
- Thyme
- Smoked paprika
Remove from heat and mix in Parmesan cheese.
3. Layer in Slow Cooker
Grease a 6-quart slow cooker.
Layer:
- Potatoes
- Onion slices
- Cream sauce
Repeat layers until ingredients are used.
4. Slow Cook
- Cover and cook on LOW for 5–6 hours.
- Potatoes are ready when tender when pierced with a fork.
5. Add Cheese
During the last 20–30 minutes, sprinkle cheddar cheese over the top. Cover until melted.
Garnish with fresh parsley before serving.
Tips for Perfect Scalloped Potatoes
- Slice potatoes evenly so they cook at the same rate.
- A mandoline slicer makes thin, uniform slices.
- Avoid opening the slow cooker frequently—it releases heat and increases cooking time.
- Yukon Gold potatoes give a naturally creamy texture.
- For extra richness, add a little cream cheese to the sauce.
