For the Chicken

Chicken: 800g (1.75 lbs) boneless, skinless chicken thighs (breasts work too, but thighs stay juicier)

Salsa: 250ml (1 cup) good-quality jarred salsa (red or green, your preference — fire-roasted adds extra depth)

Tinned black beans: 1 x 400g (15 oz) can, drained and rinsed

Tinned sweetcorn: 1 x 200g (7 oz) can, drained, or 150g (1 cup) frozen corn

Onion: 1 small, diced

Garlic: 3 cloves, minced

Tinned chopped green chillies: 1 x 115g (4 oz) can, mild or hot (or 1 fresh jalapeño, finely diced)
The Mexican Spice Mix

Smoked paprika: 1 tsp

Chilli powder: 1 tsp (adjust to heat preference)

Dried oregano: 1 tsp (Mexican oregano if you have it)

Method
1. Layer the Slow Cooker
Place the diced onion, garlic, and green chillies in the bottom of the slow cooker. Lay the chicken thighs on top in a single layer.
2. Add the Flavourings
Sprinkle the cumin, smoked paprika, chilli powder, oregano, salt, and pepper evenly over the chicken. Pour the salsa over everything. Do not stir yet.
3. Slow Cook
Cover and cook:

The chicken is done when it easily shreds with two forks and the internal temperature reaches 74°C (165°F).
4. Add Beans and Corn

5. Shred the Chicken
Remove the chicken to a bowl or board and shred with two forks. Return it to the slow cooker and stir everything together. If the mixture seems too wet, leave the lid off and cook on HIGH for 10-15 minutes to reduce slightly.

Stir in the fresh lime juice and most of the chopped coriander. Taste and adjust seasoning — it may need a pinch more salt or a squeeze more lime. Scatter the remaining coriander on top.
