Here’s how to make the perfect Slow Cooker Jacket Potato — impossibly fluffy on the inside with a beautifully seasoned skin. The slow cooker does all the work, and you don’t even need to turn on the oven.

Ingredients

Baking potatoes: 4 large (about 250-300g / 9-10 oz each) — Maris Piper, King Edward, or Russet are ideal

Olive oil: 1-2 tbsp

Sea salt flakes: a generous amount (Maldon or similar)

Butter: a knob for each potato, to serve
Method
1. Prepare the Potatoes
Scrub the potatoes clean and dry them thoroughly with a tea towel. Prick each potato deeply 6-8 times all over with a fork — this lets steam escape and prevents them from bursting.
2. Oil and Salt
Rub each potato all over with olive oil. This is essential for the skin to become seasoned and subtly crisp rather than soggy. Sprinkle generously with flaky sea salt, turning to coat. The salt draws out moisture from the skin and adds incredible flavour.
3. Load the Slow Cooker
Place the potatoes directly into the slow cooker pot. Do not add any water or liquid. They cook in their own steam. Don’t wrap them in foil either — this steams the skins and makes them soft rather than taught and seasoned.
4. Cook

The potatoes are ready when a sharp knife slides through to the centre with zero resistance. They should feel soft when gently squeezed (use a tea towel to protect your hands).
5. The Crispy Skin Secret (Optional but Recommended)
If you miss the crispy oven-baked skin, transfer the cooked potatoes to a preheated oven at 220°C / 425°F for 10-15 minutes, or under a hot grill for 5 minutes. The skin will crisp and tighten beautifully while the inside stays cloud-fluffy.
6. Serve
Split open immediately — use a fork to pierce a cross in the top and push the ends in to fluff up the flesh. Drop a generous knob of butter into the steaming centre, season with salt and pepper, and pile on your chosen toppings.

Choose similar-sized potatoes so they all finish at the same time.

Don’t overcrowd. Leave a little space between them so the warm air can circulate.

Forgot to prick them? It’s usually fine in the slow cooker as the gentle heat is less likely to cause bursting than an oven, but it’s still good practice.

Batch cook: Make extra and keep the cooked potatoes in the fridge for 3-4 days. Reheat in a hot oven or slice and fry as chunky potato cakes.
