Method
1. Make the Garlic Herb Paste
In a small bowl, combine the minced garlic, olive oil, chopped rosemary, thyme, half the parsley, salt, pepper, Dijon mustard, and lemon zest (if using). Mix into a wet paste.
2. Prepare the Beef
Pat the chuck roast thoroughly dry with kitchen paper. Using the tip of a sharp knife, poke small incisions all over the surface (this helps the paste penetrate). Rub the garlic herb paste aggressively all over the beef, massaging it into every crevice. For maximum flavour, wrap loosely and refrigerate for at least 2 hours, ideally overnight. Bring back to room temperature before cooking.
3. Sear the Roast (Recommended)
Heat a large, heavy frying pan over high heat with a drizzle of oil. Sear the roast for 3-4 minutes per side until a dark, golden-brown crust forms. This deepens the savoury flavour significantly.
4. Build the Slow Cooker Base
Lay the onion rings and smashed whole garlic cloves in the bottom of the slow cooker to create a “rack” for the beef. Place the seared roast on top. Pour the beef broth and Worcestershire sauce around the sides, being careful not to wash the herb crust off the top. Tuck the bay leaf into the liquid. Scatter the carrots and potatoes around the meat if using.
5. Slow Cook
Cover and cook on LOW for 8-10 hours until the beef is fork-tender and shreds effortlessly. The internal temperature should be around 95°C (203°F) for that true fall-apart texture.
6. Rest and Serve
Carefully remove the roast to a board and tent loosely with foil. Let it rest for 10-15 minutes. Meanwhile, remove the bay leaf from the cooking liquid. If you’d like a more concentrated jus, pour the liquid into a saucepan and simmer rapidly for a few minutes, or thicken with a cornflour slurry (1 tbsp cornflour + 2 tbsp cold water). Slice the roast thickly against the grain, or simply pull it apart. Spoon the onions and juices over the top and shower with the reserved fresh parsley.
Serving Suggestions
-
Over creamy mashed potatoes or polenta
-
Shredded in crusty rolls with the jus for dipping
-
Alongside roasted green beans or a sharp, acidic salad to cut through the richness
Make It a Full Meal Variation
This roast sits perfectly alongside the Garlic Mashed Potatoes from the pot roast recipe you asked about earlier. The flavours are designed to complement each other beautifully — the creamy garlic mash soaks up the herb-infused jus wonderfully.
