Mexican Birria is a traditional slow-cooked dish made with tender beef braised in a deeply flavored chile sauce. The meat becomes incredibly juicy and fall-apart tender, while the rich consommé (broth) is perfect for dipping tacos, serving with rice, or enjoying as a flavorful soup.

Ingredients
Beef
- 4–5 lbs beef chuck roast, cut into large chunks
- 2 lbs beef short ribs (optional, for richer flavor)
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 tablespoons oil
Chile Sauce
- 5 dried guajillo chiles, stemmed and seeded
- 2 dried ancho chiles, stemmed and seeded
- 2 dried pasilla chiles (optional)
- 5 cloves garlic
- 1 medium onion, quartered
- 2 cups beef broth
- ½ cup apple cider vinegar
- 2 tablespoons tomato paste
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano (Mexican oregano preferred)
- 1 teaspoon smoked paprika
- ½ teaspoon ground cinnamon
- 4 whole cloves
- 2 bay leaves
- 1 teaspoon black peppercorns
For Serving
- Corn tortillas
- Diced white onion
- Fresh cilantro
- Lime wedges
- Queso Oaxaca or mozzarella (for quesabirria)
- Extra consommé for dipping
Instructions
1. Prepare the Chile Sauce
- Toast dried chiles in a dry skillet for 20–30 seconds per side.
- Soak chiles in hot water for 15–20 minutes until softened.
- Blend chiles with garlic, onion, broth, vinegar, tomato paste, cumin, oregano, paprika, cinnamon, cloves, and peppercorns until smooth.
- Strain sauce for a silky texture if desired.
2. Prepare the Beef
- Season beef generously with salt and pepper.
- Heat oil in a large pot or Dutch oven.
- Brown beef pieces on all sides.
- Pour chile sauce over the meat.
- Add bay leaves and enough broth to mostly cover the beef.
3. Slow Braise
Oven Method:
- Cover and cook at 325°F (165°C) for 4–5 hours.
Stovetop Method:
- Simmer gently for 3½–4½ hours.
Slow Cooker Method:
- Cook on LOW for 8 hours.
The beef is ready when it easily shreds with a fork.
4. Shred and Serve
- Remove beef and shred.
- Skim excess fat from the broth.
- Return shredded beef to some of the consommé.
- Serve hot with toppings.

- Dip tortillas lightly into the surface fat of the consommé.
- Fill with shredded birria and cheese.
- Cook on a hot skillet until crispy.
- Serve with a cup of warm consommé for dipping.
