Ingredients
- 2 lbs (900 g) boneless, skinless chicken breasts or thighs
- 2 cups salsa verde
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp chili powder
- ½ tsp smoked paprika
- ½ tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- Juice of 1 lime
- ¼ cup chopped fresh cilantro

Instructions
Stovetop Method
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and cook for 3–4 minutes until softened. Stir in the garlic and cook for 30 seconds.
- Season the chicken with the cumin, chili powder, smoked paprika, oregano, salt, and pepper.
- Place the chicken in the skillet and pour the salsa verde over the top.
- Cover and simmer for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Remove the chicken and shred it with two forks.
- Return the shredded chicken to the skillet, stir in the lime juice and cilantro, and cook for 2–3 minutes.
Slow Cooker Method
- Place the onion, garlic, chicken, salsa verde, cumin, chili powder, smoked paprika, oregano, salt, and pepper in the slow cooker.
- Cook on Low for 6–7 hours or High for 3–4 hours.
- Shred the chicken directly in the slow cooker.
- Stir in the lime juice and cilantro just before serving.
