🛒 Ingredients
For the Salmon
- 2 salmon fillets (5–6 oz/140–170 g each)
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- ½ teaspoon paprika

- Salt and black pepper, to taste
- Juice of ½ lemon
For the Bowl
- 4 large eggs
- 8 oz (225 g) mushrooms, sliced
- 1 tablespoon butter or olive oil
- 1 ripe avocado, sliced
- 2 cups baby spinach or mixed greens
- 1 cup cucumber, sliced
- ½ cup cherry tomatoes, halved
- 2 tablespoons pumpkin seeds or sunflower seeds (optional)
Lemon Herb Dressing
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- ½ teaspoon honey (optional)
- 1 teaspoon chopped fresh parsley

1. Cook the Eggs
- Soft-boil eggs for 6½–7 minutes or hard-boil for 9–10 minutes.
- Transfer immediately to an ice bath, peel, and halve.
2. Cook the Salmon
- Pat salmon dry and season with garlic powder, paprika, dill, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Cook salmon for 4–5 minutes per side, depending on thickness.
- Finish with a squeeze of fresh lemon juice.
3. Sauté the Mushrooms
- Heat butter or olive oil in the same skillet.
- Add mushrooms with a pinch of salt.
- Cook 5–7 minutes, stirring occasionally, until golden brown.
4. Make the Dressing
Whisk together:
- Olive oil
- Lemon juice
- Dijon mustard
- Honey (if using)
- Parsley
- Salt and pepper
