Instructions
1. Make the Raspberry Purée
In a blender or food processor, combine the raspberries, 1 tablespoon maple syrup, and lemon juice. Blend until completely smooth. Taste and add the extra tablespoon of sweetener if needed. For a seedless texture, press the purée through a fine-mesh strainer into a bowl—this takes an extra minute but creates a silky-smooth layer. Set aside.
2. Mix the Chia Pudding
In a medium bowl, whisk together the milk, Greek yogurt (if using), 2 tablespoons maple syrup, vanilla extract, and salt until fully combined. Add the chia seeds and whisk vigorously for 1–2 minutes to prevent clumping. Let the mixture sit for 5 minutes, then whisk again to break up any clumps that have started to form.
3. Layer or Swirl

4. Chill and Set
Cover each jar with a lid or plastic wrap. Refrigerate for at least 4 hours, but ideally overnight. The chia seeds need time to absorb the liquid and develop that thick, tapioca-like texture. The pudding will be set and spoonable when ready.
