Ingredients
- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 cup buttermilk
- 1 egg
- 2 tbsp melted butter (or oil)
Instructions
- Mix dry
In a bowl: flour, sugar, baking powder, baking soda, salt.
- Mix wet
In another bowl: buttermilk, egg, melted butter.
- Combine (don’t overmix)
Stir wet into dry until just combined (a few lumps = good).
Cook (takes ~5 minutes total)
- Heat a pan on medium.
- Pour ¼ cup batter per pancake.
- Flip when bubbles form (about 1–2 min per side).
Speed tricks
- Use a wide pan to cook multiple at once
- Preheat the pan while mixing batter
- Use squeeze bottle → faster pouring
Upgrade the flavor
- Add vanilla or cinnamon
- Toss in chocolate chips or blueberries
- Top with butter + syrup, honey, or yogurt
