Here’s a simple, delicious way to make poached eggs on toast.
Ingredients (Serves 1)
- 2 fresh eggs
- 2 slices of bread
- 1 tsp white vinegar (optional, helps the egg hold together)
- Butter, if desired
- Salt and freshly ground black pepper
- Optional toppings: chopped chives, parsley, chili flakes, avocado, smoked salmon, or sautéed spinach
Method
- Bring a saucepan of water to a gentle simmer (not a rolling boil).
- Add the vinegar if using.
- Crack each egg into a small bowl.
- Stir the water gently to create a small whirlpool, then carefully slide in the egg.
- Cook for:
- 3–4 minutes for a runny yolk
- 5 minutes for a firmer yolk
- While the eggs cook, toast the bread and butter it if you like.
- Lift the eggs out with a slotted spoon and drain briefly on paper towel.
- Place the eggs on the toast, season with salt and pepper, and add any optional toppings.
Serving ideas
- Classic: Buttered toast with salt, pepper, and chives.
- Healthy: Wholegrain toast with mashed avocado and chili flakes.
- Indulgent: Toast with smoked salmon and a squeeze of lemon.
- Veggie: Toast topped with wilted spinach before adding the eggs.
The result is crisp toast topped with tender egg whites and a rich, runny yolk that’s perfect for breakfast or brunch.
