I see you’re shifting from slow cooker recipes to a one-pan oven dish — that works brilliantly for crispy skin and golden potatoes. Here’s a deeply satisfying One-Pan Chicken Thighs and Potatoes comfort meal that roasts together in one dish, with the chicken juices basting the potatoes as they cook.

Cook time: 45-50 minutes
-
Serves: 4
Ingredients
For the Chicken & Potatoes
-
Chicken thighs: 6-8 bone-in, skin-on thighs (about 1.2 kg / 2.5 lbs)
-
Potatoes: 800g (1.75 lbs) baby potatoes, halved, or larger waxy potatoes cut into 4cm chunks — Yukon Gold or red-skinned work best
-
Onion: 1 large, cut into thick wedges
-
Garlic: 1 whole head, cloves separated but left in their skins
-
Lemon: 1, halved (one half sliced thin, other half for squeezing at the end)
-
Fresh rosemary: 3-4 sprigs
-
Fresh thyme: 6-8 sprigs
-
Olive oil: 3 tbsp
-
Salt: 1½ tsp kosher salt
-
Black pepper: 1 tsp freshly cracked
Optional Add-Ins
-
Carrots or parsnips: 2-3, chunked
-
Whole grain mustard: 1 tbsp, whisked into the oil
-
Chilli flakes: ½ tsp, for warmth
-
Fresh parsley: chopped, for garnish
Method
1. Preheat and Prep
Preheat the oven to 220°C / 425°F / Gas Mark 7. Pat the chicken thighs extremely dry with kitchen paper — moisture is the enemy of crispy skin. Season generously with salt and pepper on both sides, getting some under the skin too.
2. Season the Potatoes
In a large roasting tin or heavy ovenproof pan (about 33x23cm / 13×9 inches), toss the potatoes, onion wedges, garlic cloves, and lemon slices with the olive oil, rosemary, thyme, salt, and pepper. Spread everything into a single even layer.
3. Arrange the Chicken
Nestle the chicken thighs skin-side up among the potatoes. The thighs should sit directly on the pan, not on top of the potatoes, so the skin gets direct heat. Everything should be snug but not piled on top of each other — steam is the enemy of crispiness.
4. Roast
Place the pan in the centre of the oven and roast for 45-50 minutes, rotating the pan once halfway through. The chicken is done when the skin is deep golden and crackling-crisp, the juices run clear, and the internal temperature reaches 75°C (165°F). Pierce a potato with a knife — it should slide through easily, with caramelised edges.
5. Rest and Finish
Remove from the oven and let rest for 5 minutes. Squeeze the reserved lemon half over the whole pan. The roasted garlic cloves can be squeezed from their skins and smeared over the chicken and potatoes. Scatter with fresh parsley if you like.
Why This Works as Comfort Food
-
The chicken fat renders down into the potatoes, creating golden, crunchy edges
-
One pan means minimal washing up and deep, connected flavours
-
The roasted lemon and whole garlic become soft, sweet, and spreadable
-
It smells like a proper Sunday roast with very little effort
Tips
-
Crispy skin guarantee: Dry the chicken thoroughly and don’t crowd the pan. If after 45 minutes the skin isn’t quite as crisp as you’d like, switch the grill on for the final 2-3 minutes — watch it closely.
-
Potatoes not browning? They might be crowded or the pan is too deep. Use a wide, shallow pan so they get direct heat.
-
Swap the herbs: Sage, oregano, or tarragon work beautifully. Try smoked paprika for a different warmth.
-
Add greens: Toss a handful of spinach or rocket through the hot pan just before serving — it wilts gently from the residual heat.
Serving Suggestions
-
A simple green salad with a sharp vinaigrette to cut through the richness
-
Steamed green beans or tenderstem broccoli
-
A dollop of sour cream or crème fraîche on the side
Would you like a version with a quick pan sauce made from the drippings, or a creamier, mustard-based variation?
