Ingredients:
-
1 cup (225g) non-fat plain Greek yogurt or low-fat cottage cheese
-
1 scoop (30g) vanilla or lemon whey/casein protein powder
-
2 Tbsp (15g) instant sugar-free lemon pudding mix (the secret thickener)
-
1–2 Tbsp lemon juice (fresh, adjust to taste)
-
1 tsp lemon zest
-
½ cup (70g) fresh or frozen blueberries
-
Optional: ¼ tsp vanilla extract, 1–2 tsp zero-calorie sweetener if desired
For Topping:
-
1 crushed graham cracker sheet (or 1 Tbsp granola)
-
Extra blueberries and lemon zest
Instructions
1. Build the Base
In a mixing bowl or a small food processor, combine the Greek yogurt (or cottage cheese), protein powder, sugar-free pudding mix, lemon juice, lemon zest, and vanilla. If using cottage cheese and you want it completely smooth, blend it first before adding other ingredients.
2. Whip It
Using a hand mixer or whisk, beat the mixture for 1–2 minutes until it’s aerated, thickened, and mousse-like. The pudding mix and protein powder will absorb moisture and create a whipped, fluffy texture. Taste and add extra sweetener or lemon juice if needed.
3. Layer or Swirl
Gently fold in most of the blueberries, reserving a few for topping. Swirling creates pockets of berry, so don’t over-mix. Spoon the whip into a serving bowl.
4. Garnish & Chill
Top with remaining blueberries, a sprinkle of lemon zest, and crushed graham cracker for a “crust” vibe. For the best texture, let it set up in the fridge for 10–15 minutes (optional but recommended—it gets thicker and more cheesecake-like).
Tips & Swaps
-
Pudding mix essential: The instant sugar-free pudding mix is what gives it that thick, dessert-like body for very few carbs. If you leave it out, the texture will be looser. A half tablespoon of psyllium husk or xanthan gum can work as a sub, but start very small.
-
Protein powder note: Whey-casein blends or pure casein create the thickest, creamiest result. Whey isolate alone will still work, but the whip may be slightly thinner—adding an extra tablespoon of pudding mix helps.
-
Cottage cheese version: Higher protein and ultra-creamy when blended. It tastes like a lemon cheesecake parfait.
-
Freeze it: Portion the mixture into a bowl and freeze for 60–90 minutes. It becomes a fluffy, soft-serve frozen yogurt texture—unreal on a hot day.
-
Macro adjustments: Drop the graham cracker to save carbs, or add a tablespoon of almond butter for healthy fats and a subtle nutty flavor.
