Method

Preheat oven to 230°C (450°F) with a cast-iron skillet inside.

Cut butter into flour until pea-sized lumps remain. Stir in buttermilk just until shaggy.

Pat dough to 1 inch thick, fold in thirds, repeat twice. Pat to 1 inch. Cut with a 2.5-inch cutter āĀ push straight down, do not twist.

Place biscuits touching in the hot skillet. BakeĀ 13-16 minutesĀ until tall and deeply golden. Brush with melted butter.
2. Creamy Shrimp and Grits

For the Grits

1 cup stone-ground grits (not instant)

4 cups water or chicken stock

½ cup heavy cream

For the Shrimp

500g (1 lb) large shrimp, peeled, deveined

Grits

Bring water/stock and salt to a boil. Whisk in grits slowly to prevent lumps. Reduce to a bare simmer.

Shrimp
