Honey Garlic Rosemary Baked Chicken
This recipe uses bone-in, skin-on chicken thighs for maximum flavor and juiciness, but a whole cut-up chicken or drumsticks work beautifully too. Fresh rosemary is the star herb, infusing the honey-garlic butter with its piney, woodsy fragrance.

Preheat the Oven: Preheat your oven to 400°F (200°C). Pat the chicken thighs completely dry with paper towels—this is critical for crispy skin.

Season the Chicken: Season the chicken generously on both sides with the salt, pepper, and garlic powder. Let it sit at room temperature for 20-30 minutes while the oven fully preheats.

Make the Glaze: In a small bowl, whisk together the melted butter, honey, minced garlic, chopped fresh rosemary, soy sauce, apple cider vinegar, and red pepper flakes if using.

Sear the Chicken: Heat the olive oil in a large, oven-safe cast-iron skillet or heavy-bottomed roasting pan over medium-high heat. Once shimmering, place the chicken skin-side down in the pan. Sear undisturbed for 6-8 minutes until the skin is deeply golden brown and releases easily from the pan. Flip and sear the other side for 2 minutes. Remove the pan from heat.
