Honey Garlic Chicken Thighs
The magic is in the technique: searing the thighs skin-side down until the skin is shatteringly crisp, then roasting them briefly while the honey garlic glaze reduces in the same pan into a sticky, spoonable sauce. Bone-in, skin-on thighs are essential here for the best texture and flavor.

Preheat and Prep: Preheat your oven to 400°F (200°C). Pat the chicken thighs completely dry with paper towels—this is the most important step for crispy skin. Season both sides generously with salt and pepper.

Sear the Chicken: Heat the olive oil in a large, oven-safe cast-iron skillet over medium-high heat. Once the oil is shimmering, place the chicken thighs skin-side down in the pan. Do not crowd them; leave a little space between each piece. Sear undisturbed for 8-10 minutes, until the skin is deeply golden brown and releases easily from the pan. Flip and cook the other side for 2 minutes. Transfer the chicken to a plate; the chicken will not be fully cooked yet.

Make the Honey Garlic Glaze: Carefully drain off most of the rendered chicken fat from the skillet, leaving about 1 tablespoon in the pan. Reduce the heat to medium. Add the butter and minced garlic, stirring constantly for 30-60 seconds until intensely fragrant. Do not let the garlic burn. Pour in the honey, soy sauce, apple cider vinegar, and red pepper flakes. Stir to combine and bring the sauce to a rapid simmer. Let it bubble for 2-3 minutes, stirring occasionally, until it looks slightly thickened and glossy.

Glaze and Roast: Return the chicken thighs to the skillet, skin-side up this time, nestling them into the bubbling sauce. Spoon some of the glaze over each thigh. Transfer the skillet to the preheated oven. Roast, uncovered, for 15-20 minutes, until the chicken is cooked through and the internal temperature reaches 175°F (79°C) at the thickest part. The sauce will continue to reduce and become sticky.

Rest and Serve: Remove the skillet from the oven (handle will be screaming hot—drape a towel over it immediately!). Let the chicken rest in the pan for 5 minutes. Spoon the thick, syrupy glaze generously over each thigh. Shower with fresh parsley or sliced green onions. Serve immediately over rice, mashed potatoes, or with roasted vegetables to catch every drop of that incredible sauce.
