Ingredients
For the Vegetable Filling
- 1 tablespoon olive oil
- 1 small zucchini, diced
- 1 small yellow squash, diced
- 1 red bell pepper, diced
- 1 small red onion, thinly sliced
- 1 cup baby spinach, roughly chopped
- 2 cloves garlic, minced
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- ¼ teaspoon smoked paprika
- Salt and black pepper, to taste
For the Quesadillas
- 4 large flour tortillas
- 1 cup shredded mozzarella cheese
- ½ cup crumbled feta cheese
- ¼ cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- Butter or olive oil for grilling
Optional Add-Ins
- ¼ cup sliced Kalamata olives
- ¼ cup chopped sun-dried tomatoes
- ½ cup canned chickpeas, drained and rinsed
- Fresh basil leaves
Yogurt Dipping Sauce
- ¾ cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 teaspoon olive oil
- 1 small garlic clove, minced
- 1 tablespoon chopped fresh dill or parsley
- Salt and pepper, to taste
Instructions
1. Cook the Vegetables
Heat the olive oil in a large skillet over medium heat.
Add the onion, zucchini, squash, and bell pepper. Cook for 5–6 minutes, stirring occasionally, until just tender.
Stir in the garlic, oregano, basil, smoked paprika, salt, and pepper. Cook for 1 minute.
Add the spinach and cook until just wilted. Remove from the heat and let the mixture cool slightly.
2. Prepare the Dipping Sauce
In a small bowl, whisk together:
- Greek yogurt
- Lemon juice
- Olive oil
- Garlic
- Fresh herbs
- Salt and pepper
Refrigerate until ready to serve.
3. Assemble the Quesadillas
Lay the tortillas flat.
On one half of each tortilla, layer:
- Mozzarella cheese
- Vegetable mixture
- Feta cheese
- Parmesan cheese
- Parsley
- Optional olives, sun-dried tomatoes, or chickpeas
Fold the tortillas in half and press gently.
4. Grill
