Gorgeous Classic Apple Pie
The secrets are in the details: using a mix of apple varieties for complex flavor, letting them macerate to release excess liquid, and reducing that liquid into a concentrated syrup before baking. This prevents a soggy bottom and creates a deeply flavorful filling.
Ingredients
For the Double Pie Crust (makes 2 discs):

For the Apple Filling:

3 lbs (1.4 kg) apples, a mix of sweet and tart (see note below)

⅔ cup (135g) granulated sugar

2 tablespoons fresh lemon juice

3 tablespoons unsalted butter

¼ cup (30g) all-purpose flour

1 ½ teaspoons ground cinnamon

¼ teaspoon freshly grated nutmeg

¼ teaspoon ground allspice

Pinch of ground cloves

½ teaspoon vanilla extract

Pinch of sea salt
Apple Note: The best mix is a combination of firm, tart apples like Granny Smith and sweeter, firmer ones like Honeycrisp, Braeburn, or Pink Lady. This gives a complex, balanced flavor and a filling that doesn’t turn to mush.
Instructions
1. Make the Pie Crust (can be done 1-2 days ahead):

In a large bowl, whisk together the flour, sugar, and salt. Add the cold butter cubes and toss to coat. Using a pastry blender or your fingertips, work the butter into the flour until the largest pieces are the size of peas.

Combine the ice water and apple cider vinegar. Drizzle ½ cup of the mixture over the flour and toss with a fork. Continue adding liquid, a tablespoon at a time, until the dough just holds together when squeezed.

Turn the dough out onto a clean surface and divide in half. Gently press each half into a 1-inch thick disc, wrap tightly in plastic wrap, and refrigerate for at least 2 hours, preferably overnight.
2. Prep the Apples:

Peel, core, and slice the apples into ¼-inch thick slices. In a very large bowl, toss them with the granulated sugar and lemon juice. Let them macerate at room temperature for at least 30 minutes, up to 1.5 hours, stirring occasionally. The sugar will draw out a surprising amount of juice—this is the key to a non-soggy pie.
3. Reduce the Juices:

Place a colander over a saucepan. Pour the apples and their accumulated juice into the colander, catching all the liquid in the pan below. Return the drained apples to the large bowl.

Place the saucepan of liquid over medium-high heat and add the 3 tablespoons of butter. Bring to a simmer and cook, swirling occasionally, until it thickens into a glossy, amber syrup that reduces to about ⅓ cup. This takes about 5-8 minutes. Pour this hot, concentrated syrup over the apples.

Sprinkle the flour, cinnamon, nutmeg, allspice, cloves, vanilla, and salt over the apples. Gently toss until everything is evenly coated. Let the filling cool to room temperature. (You can make the filling up to 24 hours ahead and refrigerate it.)
4. Roll Out the Crust and Assemble:

Position a rack in the lower third of the oven with a baking sheet on it and preheat to 400°F (200°C). The hot baking sheet helps crisp the bottom crust.

On a lightly floured surface, roll out one disc of dough into a 12-inch circle. Gently transfer it to a standard 9-inch pie plate (not deep dish). Roll out the second disc for the top crust, or for a lattice.
5. Fill the Pie:

Pile the cooled apple filling into the bottom crust, creating a slight mound in the center. All the syrup and any small bits left in the bowl should be scraped on top.

Place the top crust over the filling. Trim the edges to a 1-inch overhang, fold the top crust under the edge of the bottom crust, and crimp decoratively to seal. Cut several steam vents in the top crust with a sharp knife (unless you’re making a lattice).
6. Egg Wash and Bake:

Brush the entire surface of the pie with the egg wash and sprinkle generously with coarse sugar.

Place the pie on the preheated baking sheet in the oven. Bake at 400°F for 25 minutes. Then, without opening the oven, reduce the temperature to 350°F (175°C) and bake for another 40-50 minutes.

Check for doneness: The pie is done when the crust is a deep golden brown and you can see the juices bubbling thickly through the vents. The filling should be active and visibly thickened, not runny. If the edges brown too quickly, tent them with a pie shield or strips of foil.
7. The Hardest Step — Cool Completely:

This is non-negotiable. Let the pie cool on a wire rack for at least 4 hours, or preferably all day, before slicing. The pectin in the apples needs this time to set so the filling isn’t soupy. A slice of apple pie should be able to hold its shape.
