- 3 large eggs, room temperature
- ¾ cup (95 g) all-purpose flour

- 4 tbsp unsalted butter

Instructions
1. Preheat the Oven
- Place a 10- or 12-inch cast-iron skillet (or oven-safe baking dish) in the oven.
- Preheat the oven to 425°F (220°C).
2. Make the Batter
- In a blender or mixing bowl, combine:

- Flour
- Milk
- Sugar
- Vanilla
- Salt
- Cinnamon (if using)
- Blend or whisk until completely smooth.
- Let the batter rest for 5–10 minutes.
3. Prepare the Pan
- Carefully remove the hot skillet from the oven.
- Add the butter and swirl until completely melted and the pan is coated.
4. Bake
- Immediately pour the batter into the hot skillet.
- Bake for 20–25 minutes.
- Do not open the oven door while baking, as this can cause the pancake to deflate.
The pancake is done when it is deeply puffed with golden-brown edges.
5. Serve
Remove from the oven. The pancake will naturally deflate slightly as it cools.
Dust with powdered sugar and add your favorite toppings. Slice into wedges and serve immediately.
