Mushroom Hunter Sauce (Jägersoße)
- 2 tbsp butter
- 1 tbsp olive oil
- 8 oz (225 g) mushrooms, sliced
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1 tbsp flour
- 1½ cups beef broth
- ½ cup heavy cream
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- ½ tsp thyme
- Salt and pepper, to taste
- 2 tbsp fresh parsley, chopped
Instructions
1. Prepare the Schnitzel
- Place pork cutlets between plastic wrap and pound until about ¼ inch (½ cm) thick.
- Season both sides with salt, pepper, and paprika.
- Set up three bowls:
- Flour
- Beaten eggs
- Breadcrumbs
- Coat each cutlet:
- Flour → egg → breadcrumbs
- Press breadcrumbs gently so they stick.
2. Fry the Schnitzel
- Heat about ¼ inch of oil in a large skillet over medium-high heat.
- Fry schnitzels for 3–4 minutes per side until golden and crispy.
- Transfer to a paper towel-lined plate.
- Keep warm.
3. Make the Jäger Sauce
- Melt butter with olive oil in a skillet.
- Add mushrooms and onions.
- Cook for 6–8 minutes until browned.
- Add garlic and cook for 30 seconds.
- Sprinkle flour over the mushrooms and stir for 1 minute.
- Slowly add beef broth while stirring.
- Add cream, Dijon mustard, Worcestershire sauce, and thyme.
- Simmer until thick and creamy.
- Finish with parsley.
4. Serve
Place crispy schnitzel on a plate and spoon the mushroom gravy over the top.
