The secret to the signature crunch without deep-frying is brushing or spraying the tortillas generously with oil and baking or air-frying at high heat. A creamy, cheesy, slightly spicy chicken filling keeps the inside tender while the outside transforms into a crispy shell.
Ingredients (Makes 12-14 Taquitos)
For the Filling:

Make the Filling: In a large bowl, combine the shredded chicken, softened cream cheese, shredded cheese, salsa verde, chili powder, cumin, garlic powder, onion powder, salt, cilantro, and lime juice. Mix vigorously with a fork or your hands until everything is thoroughly combined and the mixture is creamy and cohesive.

Soften the Tortillas (Crucial Step): Corn tortillas will crack and break if rolled cold. Wrap a stack of 5-6 tortillas in damp paper towels and microwave for 30-45 seconds until they’re warm, steamy, and perfectly pliable.
