Crockpot French Onion Meatloaf with Melted Swiss Cheese
Caramelized onions, Gruyère (or Swiss), and a rich beefy broth are the soul of this dish. By shaping the meatloaf to fit the slow cooker and using a foil sling, you get a perfectly cooked, sliceable loaf without it sitting in its own fat.

2 large yellow or sweet onions, halved and thinly sliced

¼ cup beef broth

½ cup beef broth (for the bottom of the crock)

6-8 thin slices of Swiss cheese or Gruyère cheese (Gruyère is the classic French onion choice)

Caramelize the Onions (The Most Important Step): In a large skillet over medium-low heat, melt the butter with the olive oil. Add the sliced onions and a pinch of salt. Cook, stirring only occasionally, for 20-25 minutes until they are deeply golden brown, soft, and sweetly fragrant. Patience is key. When they are done, add the tablespoon of beef broth and scrape up any browned bits from the pan. Set aside to cool slightly.

Make the Meatloaf Mixture: In a large bowl, gently combine the ground beef, fresh breadcrumbs, eggs, dry French onion soup mix, Worcestershire sauce, thyme, black pepper, and ¼ cup of beef broth. Add about three-quarters of the cooled caramelized onions to the bowl, reserving the prettiest ones for topping. Gently mix with your hands just until combined—overworking makes the meatloaf dense.

Create a Foil Sling and Shape: Tear off two long strips of heavy-duty aluminum foil (about 3 inches wide) and cross them in your slow cooker to create a sling that will help you lift the meatloaf out later. This is a game-changer. Place a small sheet of parchment paper over the center where the meatloaf will sit.
