These Crispy Corn Fritters are golden and crunchy on the outside, tender and fluffy on the inside, and packed with sweet corn. They’re perfect as an appetizer, side dish, or light meal.

Ingredients
- 2 cups corn kernels (fresh, frozen and thawed, or canned and drained)
- 1 cup all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp paprika (optional)
- 2 large eggs
- ⅓ cup milk
- 2 tbsp melted butter or vegetable oil
- 2 green onions, finely sliced
- 2 tbsp chopped fresh parsley or chives (optional)
- Vegetable oil, for frying
Instructions
- In a large bowl, whisk together the flour, baking powder, salt, pepper, and paprika.
- In another bowl, beat the eggs with the milk and melted butter.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Fold in the corn, green onions, and parsley. The batter should be thick but scoopable.
- Heat about ¼ inch (6 mm) of oil in a large skillet over medium heat.
- Drop heaping tablespoons of batter into the hot oil, flattening each slightly with the back of the spoon.
- Fry for 2–3 minutes per side, or until deep golden brown and cooked through.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve warm with your favorite dipping sauce.

- 1 finely diced jalapeño
- ½ tsp garlic powder
- ½ tsp onion powder
- Crumbled cooked bacon

Storage

- Pat frozen or canned corn dry to prevent watery batter.
- Don’t overcrowd the pan; cook in batches for even browning.
- Keep the oil at 350°F (175°C) for crisp, non-greasy fritters.
- For extra texture, pulse ½ cup of the corn in a food processor before mixing it into the batter while leaving the rest whole.
