Crispy Buffalo Chicken Wings

Instructions
1. Prep the Wings (Crucial Step)
Pat the wings completely dry with paper towels. Any moisture will steam them instead of crisping them. Place in a large bowl. Toss with the baking powder, salt, pepper, and garlic powder until every wing is evenly coated. The baking powder raises the skin’s pH and breaks down proteins, resulting in blistery, crackling skin.
2. Oven Method (Best for Crispy)
Preheat oven to 425°F (220°C) . Line a baking sheet with aluminum foil and place a wire rack on top. Grease the rack lightly. Arrange the wings in a single layer on the rack, skin side up, making sure they don’t touch.
Bake for 20 minutes. Flip, then bake another 20–25 minutes until deep golden brown and skin is blistered and crispy. Internal temp should reach 165°F, but going closer to 175–180°F for wings is fine—they’re fattier and won’t dry out.
3. Air Fryer Method (Faster)
Preheat air fryer to 400°F . Arrange wings in a single layer (work in batches). Cook 10 minutes, flip, cook 8–10 more minutes until crispy and golden. No wire rack needed.
4. Make the Buffalo Sauce
While the wings cook, whisk together the Frank’s RedHot, melted butter, honey, Worcestershire, and cayenne in a large bowl until emulsified and smooth. It should be glossy and deeply orange-red.
5. Toss the Wings
Immediately after the wings come out of the oven, transfer them to the bowl with the buffalo sauce. Toss vigorously to coat every wing thoroughly. Do this while they’re piping hot—the sauce clings better.
6. Serve
Pile the sauced wings onto a platter. Serve immediately with blue cheese dip, ranch, celery sticks, and carrot sticks on the side. Napkins are mandatory.
Quick Blue Cheese Dip

½ cup crumbled blue cheese

½ cup sour cream

¼ cup mayonnaise

1 Tbsp lemon juice

Salt and pepper
→ Mash everything together with a fork, leaving some blue cheese chunks. Refrigerate 30 min before serving.
Crispy Wing Secrets

Baking powder, not baking soda. Baking soda leaves a metallic taste. Aluminum-free baking powder is key.

Drying the skin is non-negotiable. Use paper towels. For next-level crispiness, leave wings uncovered in the fridge for a few hours or overnight to dry out the skin.

Wire rack = airflow. Roasting on a rack lifts them out of their rendered fat, so they crisp all around instead of steaming in their own juices.
Sauce Variations

Garlic Parmesan: Toss hot wings in ⅓ cup melted butter mixed with 3 minced garlic cloves and ½ cup grated Parmesan. Add parsley.
