Ingredients
Salad
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) black-eyed peas, drained and rinsed
- 2 cups corn kernels (fresh, frozen, or canned)
- 2 cups cherry tomatoes, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 jalapeño, finely chopped (seeded for less heat)
- ½ red onion, finely diced
- 1 avocado, diced
- ½ cup fresh cilantro, chopped
Lime Dressing
- ⅓ cup olive oil
- ¼ cup fresh lime juice
- 2 tablespoons red wine vinegar
- 1 tablespoon honey or sugar
- 1 teaspoon cumin
- ½ teaspoon chili powder
- 1 clove garlic, minced
- Salt and black pepper, to taste
Instructions
- In a large bowl, combine black beans, black-eyed peas, corn, tomatoes, peppers, jalapeño, red onion, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, vinegar, honey, cumin, chili powder, garlic, salt, and pepper.
- Pour dressing over the bean mixture and toss gently.
- Cover and refrigerate for at least 30 minutes to allow flavors to blend.
- Fold in diced avocado just before serving.
