Classic Protein Balls with Oats

The Master Formula
For perfect protein balls every time, you need these four components:

Binder (sticky): ½ cup nut butter or seed butter

Sweetener (sticky): ⅓ cup honey, maple syrup, or date paste

Dry base: 1 cup rolled oats + ¼ cup ground flaxseed or protein powder

Mix-ins: ¼–½ cup chocolate chips, dried fruit, nuts, etc.
Classic Peanut Butter Chocolate Chip Version
Ingredients:

½ cup natural peanut butter (creamy, the drippy kind)

⅓ cup honey or maple syrup

¼ cup vanilla or chocolate protein powder (optional, see note)

2 Tbsp ground flaxseed or chia seeds

1 tsp vanilla extract

Pinch of sea salt (if peanut butter is unsalted)

⅓ cup mini chocolate chips
Optional Add-Ins:

2 Tbsp unsweetened shredded coconut

2 Tbsp hemp hearts

1 Tbsp cacao nibs for crunch
If needed to adjust texture:

Too dry? Add 1–2 tsp milk or water.

Too sticky? Add 1–2 Tbsp more oats.
Instructions
1. Mix the Wet Ingredients
In a large bowl, stir together the peanut butter, honey, and vanilla extract until smooth and fully combined. If your peanut butter is thick or cold from the fridge, microwave it for 15–20 seconds first so it mixes easily.
2. Add the Dry Ingredients
Add the rolled oats, protein powder (if using), ground flaxseed, and salt. Fold everything together with a spatula or wooden spoon until a thick, cohesive dough forms. It should hold together when squeezed—this takes a little elbow grease. Fold in the chocolate chips last.
3. Check the Texture
Squeeze a small amount in your hand. It should hold its shape without crumbling, but not be overly sticky. Adjust with a splash of milk (if too dry) or a tablespoon of oats (if too wet).
4. Roll Into Balls
Scoop out about 1 tablespoon of the mixture and roll between your palms into a smooth ball. A small cookie scoop makes this fast and uniform. If the mixture sticks to your hands, dampen them slightly with water or a tiny dab of neutral oil.
5. Chill to Set
Place the protein balls on a parchment-lined plate or baking sheet. Refrigerate for at least 30 minutes to firm up. They’ll become denser and chewier as they chill.
6. Store
Transfer to an airtight container. Store in the fridge for up to 2 weeks or freeze for up to 3 months. They’re delicious straight from the freezer—chewy and fudge-like.
