Classic French Chocolate Mousse
Ingredients
Serves 6-8

200g (7 oz) dark chocolate (60-70% cacao), finely chopped

3 tbsp (45g) unsalted butter, at room temperature

4 large eggs, separated

1/4 cup (50g) granulated sugar, divided

1/2 cup (120ml) heavy cream, very cold

1 tsp vanilla extract
-
Pinch of fine sea salt

Optional: 1-2 tbsp espresso, dark rum, or orange liqueur
Method
1. Melt the Chocolate

Place the chopped chocolate and butter in a large heatproof bowl. Set over a pan of barely simmering water (bowl must not touch the water). Stir gently until fully melted and smooth.

Remove from heat and stir in the vanilla, salt, and liqueur/espresso if using. Let cool slightly while you proceed — it should be warm, not hot, when you add the egg yolks.
2. Whip the Egg Yolks (Pâte à Bombe)

In a separate bowl, beat the 4 egg yolks with 2 tablespoons of the sugar. Whisk vigorously by hand or with an electric mixer for 2-3 minutes until pale, thick, and ribbon-like. This step builds the mousse’s structure.

Stir the whipped yolks into the warm chocolate mixture until fully incorporated. It will thicken noticeably.
3. Whip the Egg Whites

In a perfectly clean, grease-free bowl, whip the 4 egg whites with the remaining 2 tablespoons of sugar until they hold firm, glossy peaks. They should be stiff but not dry or grainy.
4. Whip the Cream

In another cold bowl, whip the heavy cream to soft peaks. It should be billowy and hold its shape softly, not be stiff like butter.
5. Fold Everything Together

First addition (lighten): Stir one generous spoonful of the whipped egg whites into the chocolate mixture. This sacrifices some air but makes the base lighter.

Second addition (fold): Gently fold in half the remaining egg whites with a large spatula, using a cutting-and-folding motion. Be patient.

Third addition: Fold in the whipped cream. Then finally the rest of the egg whites. Fold until just no streaks remain. A few tiny streaks are better than over-mixing and deflating the mousse.
6. Set and Serve

Spoon or pipe the mousse into elegant glasses, ramekins, or one large bowl. Cover gently with plastic wrap.

Refrigerate for a minimum of 4 hours, ideally overnight. The texture becomes velvety and the flavor deepens.

Serve with lightly whipped cream, chocolate shavings, or fresh raspberries.
Note on Raw Eggs: Use very fresh, high-quality eggs. If you have concerns, look for pasteurized shell eggs, or use a Swiss meringue method (heating the whites and sugar over a water bath before whipping).
