Classic Fluffy Buttermilk Pancakes

Instructions
1. Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until evenly combined.
2. Mix Wet Ingredients
In a separate medium bowl or large measuring cup, whisk together the buttermilk, eggs, melted butter, and vanilla extract until smooth.
3. Combine (The Lumpy Batter Rule)
Pour the wet ingredients into the dry ingredients. Stir gently with a whisk or spatula until just combined. The batter should be lumpy with visible streaks of flour. Overmixing is the number one cause of tough, flat pancakes—step away when there are still small flour pockets. A few lumps are your friend.
4. Rest the Batter
Let the batter rest for 5–10 minutes. This hydrates the flour, activates the baking powder, and allows the gluten to relax, resulting in taller, fluffier pancakes. The batter will puff slightly and develop small bubbles.
5. Heat the Griddle
Heat a large nonstick skillet, cast-iron pan, or griddle over medium heat. To test the temperature, sprinkle a few drops of water on the surface—they should dance and sizzle immediately. Lightly grease with butter or oil, wiping away any excess with a paper towel so the pancakes brown evenly without frying.
6. Cook the Pancakes
Pour about ¼ cup of batter onto the hot griddle for each pancake, leaving space between them. Cook until bubbles form on the surface and the edges look set and slightly matte, about 2–3 minutes. The bubbles should pop and leave small craters.
7. Flip with Confidence
Slide a thin spatula under the pancake and flip in one smooth motion. Cook the second side for another 1–2 minutes until golden brown and the center springs back when lightly pressed. Don’t press down with the spatula—it squeezes out the air.
8. Keep Warm & Serve
Transfer cooked pancakes to a wire rack set on a baking sheet in a 200°F oven to keep warm while you finish the batch. Serve stacked high with butter, warm maple syrup, and your favorite toppings.
DIY Buttermilk Substitute
No buttermilk? For every 1 cup needed, pour 1 tablespoon of white vinegar or lemon juice into a measuring cup, then fill with milk to the 1-cup line. Stir and let sit for 5–10 minutes until it thickens and curdles slightly. This works beautifully every time.
