Ingredients
Chicken & Marinade
- 4–5 pounds chicken thighs and drumsticks (bone-in, skin-on preferred)
- 2 cups dry red wine (Burgundy, Pinot Noir, or Cabernet)
- 2 tablespoons olive oil
- 4 cloves garlic, smashed
- 2 bay leaves
- 4 sprigs fresh thyme
- 2 sprigs fresh rosemary
- Salt and black pepper
Braising Ingredients
- 6 ounces bacon or pancetta, diced
- 1 large onion, chopped
- 2 carrots, sliced
- 8 ounces mushrooms, quartered
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 3 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 tablespoon Worcestershire sauce (optional)
- 1 teaspoon dried thyme (if not using fresh)
- 1 tablespoon butter
Garnish
- Fresh parsley, chopped
- Pearl onions (optional)
Instructions
1. Marinate the Chicken (Optional but Recommended)
- Place chicken in a large bowl.
- Add red wine, garlic, bay leaves, thyme, rosemary, salt, and pepper.
- Cover and refrigerate for 4 hours or overnight.
- Remove chicken and pat dry. Reserve the wine marinade.
2. Brown the Chicken
- Heat olive oil in a large Dutch oven over medium-high heat.
- Season chicken with salt and pepper.
- Brown chicken pieces skin-side down for 5–7 minutes until golden.
- Flip and brown the other side.
- Remove chicken and set aside.
3. Cook the Bacon and Vegetables
- Add bacon to the same pot.
- Cook until crisp.
- Add onion and carrots; cook for 5 minutes.
- Add mushrooms and garlic; cook another 3 minutes.
- Stir in tomato paste and cook for 1 minute.
4. Build the Sauce
- Sprinkle flour over vegetables and stir for 1 minute.
- Slowly add reserved wine marinade, scraping up browned bits.
- Add chicken broth and Worcestershire sauce.
- Return chicken to the pot.
5. Braise
Oven Method:
- Cover and bake at 325°F (165°C) for 1½ hours, until chicken is very tender.
Stovetop Method:
- Cover and simmer gently for 1½ hours.
6. Finish the Dish
- Remove chicken from sauce.
- If needed, simmer sauce uncovered for 10–15 minutes to thicken.
- Stir in butter for a silky finish.
- Return chicken to the sauce.
- Garnish with fresh parsley.
