Classic American Breakfast Combo Platter
This platter features the holy trinity of American breakfast: fluffy pancakes or golden toast, crispy bacon or sausage, and perfectly cooked eggs your way. Add a side of crispy hash browns, and you’ve achieved diner nirvana. The key to pulling this off with everything hot at the same time is a strategic sequence and a warm oven.
The Complete Platter Components (per person)
-
Eggs: 2 large eggs, cooked to order (scrambled, sunny-side up, over easy, or poached)
-
Pancakes or Toast: 2 fluffy buttermilk pancakes or 2 thick slices of sourdough or Texas toast, buttered
-
Breakfast Meat: 2-3 strips of thick-cut bacon or 2 pork sausage links or patties
-
Hash Browns: A generous mound of crispy shredded or country-style hash browns
-
Extras: Salted butter, warm maple syrup, fruit jam, a small side of fresh fruit or a few orange slices
Master Game Plan (for 4 platters)
Preheat your oven to 200°F (95°C). This is your holding zone to keep things warm. Place a large baking sheet in the oven.
Step 1: The Hash Browns
(Start these first; they take the longest and hold well in the oven.)
-
1.5 lbs (680g) Russet potatoes, peeled
-
½ small onion, grated (optional)
-
2-3 tablespoons clarified butter, bacon fat, or neutral oil
-
Salt and pepper
Grate the potatoes using the large holes of a box grater. Place the shreds in a clean kitchen towel and wring out every last drop of liquid—this is the secret to crispiness. Toss the dry shreds with the grated onion, salt, and pepper. Heat the fat in a large non-stick or cast-iron skillet over medium-high heat. Spread the potatoes in an even layer, press down firmly, and cook undisturbed for 5-7 minutes until deeply golden on the bottom. Flip in sections, press again, and cook for another 5-7 minutes. Transfer the finished hash browns to the baking sheet in the warm oven.
Step 2: The Breakfast Meat
-
12 strips thick-cut bacon or 8 sausage links/4 patties
For bacon: Arrange strips in a cold skillet, then turn heat to medium. Cook slowly, turning occasionally, until the fat renders and the bacon is your desired level of crisp. Drain on paper towels, then transfer to the warm oven.
For sausage: Cook links or patties in a skillet over medium heat, turning to brown all sides, until cooked through. Transfer to the warm oven.
Step 3: The Pancakes (or Toast)
(Hold the pancakes in the oven; toast is made à la minute.)
For Pancakes:
-
2 cups all-purpose flour
-
2 tablespoons sugar
-
2 teaspoons baking powder
-
½ teaspoon baking soda
-
½ teaspoon salt
-
2 cups buttermilk
-
2 large eggs
-
¼ cup melted butter
-
Butter and maple syrup, for serving
Whisk dry ingredients, then whisk in wet ingredients until just combined (lumps are fine). Cook ¼-cup portions on a buttered griddle or skillet over medium heat. Flip when bubbles pop on the surface and the edges look set. Place finished pancakes directly on the oven rack (not the baking sheet, to keep them from steaming) or on a plate in the warm oven.
For Toast: Save this until the very end. Drop bread in the toaster right before you start the eggs.
Step 4: The Eggs
(Cook these last, just moments before plating.)
For a combo platter, sunny-side up or scrambled are the classics.
-
8 large eggs (2 per person)
-
2 tablespoons butter
-
Salt and pepper
For Scrambled: Whisk eggs with a splash of milk, salt, and pepper. Melt butter in a non-stick skillet over medium-low heat. Pour in the eggs and stir gently with a silicone spatula, pushing from the edges toward the center, until soft, creamy curds form. Remove from heat while still slightly glossy.
For Sunny-Side Up: Melt butter in a non-stick skillet over medium-low heat. Crack eggs gently into the pan. Cover with a lid and cook for 2-3 minutes, until the whites are set but the yolks are still brilliantly runny.
Step 5: The Plating
Now, pull everything from the oven and assemble each platter:
-
A generous mound of crispy hash browns.
-
Two strips of bacon or sausage links, artistically crossed or laid parallel.
-
Two pancakes stacked, a pat of butter melting on top, a drizzle of warm syrup cascading down, or two slices of golden buttered toast with a side of jam.
-
Two eggs, nestled alongside, with a crack of black pepper.
-
A small orange wedge or a few melon slices for that classic diner touch.
Serve immediately with hot coffee and cold orange juice.
