For the Sauce:

¼ cup low-sodium soy sauce

3 tablespoons hoisin sauce

3 tablespoons rice vinegar

3 tablespoons sugar

2 tablespoons sriracha or chili garlic sauce

1 tablespoon toasted sesame oil

2 garlic cloves, minced

1 teaspoon fresh ginger, grated

1 tablespoon cornstarch mixed with 2 tablespoons cold water

4-6 dried red chili peppers (optional, for heat and presentation)

Sliced green onions and toasted sesame seeds, for garnish
Instructions:

Toss chicken chunks in cornstarch, then dip in beaten egg. Shallow fry in ½ inch of hot oil until golden and cooked through, about 4-5 minutes per batch. Drain on a wire rack.

In a wok or saucepan, combine all sauce ingredients except the cornstarch slurry. Bring to a simmer, then whisk in the slurry and cook until thick and glossy.

Toss the crispy chicken in the sauce until every piece is coated. Fold in the dried chili peppers. Garnish with green onions and sesame seeds.
2. The Mandatory Side: House Special Fried Rice
The smoky, savory, vegetable-studded rice that defines the combo platter experience.
Ingredients:

3 cups cold, day-old jasmine rice

3 tablespoons neutral oil, divided

2 large eggs, beaten
-
½ cup diced char siu (Chinese BBQ pork), ham, or cooked shrimp
-
½ cup frozen peas and diced carrots, thawed
-
3 green onions, sliced (white and green separated)
-
2 tablespoons soy sauce
-
1 teaspoon toasted sesame oil
-
Pinch of white pepper and sugar
Instructions:

Heat 1 tablespoon oil in a wok over high heat. Scramble the eggs into small curds, then set aside.

Add remaining oil to the wok. Stir-fry the white parts of green onions, peas, and carrots for 30 seconds. Add the cold rice, spreading it in an even layer. Let it sear for 45 seconds, then toss. Repeat for 2-3 minutes until the rice is toasted and golden in spots.

Add the char siu or protein, soy sauce, sesame oil, white pepper, and sugar. Toss for 1 minute. Return the eggs and add green onion tops. Toss once more and serve.
3. The Appetizer: Crab Rangoon
Crispy wonton packets filled with a creamy, crabby, garlicky center.
Ingredients (Makes 12-14):

8 oz (225g) cream cheese, softened

6 oz (170g) canned crab meat, drained and flaked (or imitation crab, finely chopped)

2 green onions, finely sliced

1 garlic clove, minced

1 teaspoon Worcestershire sauce

½ teaspoon sugar
-
Pinch of salt

12-14 wonton wrappers

Water for sealing

Oil for frying (or use the baked eggroll method)
Instructions:

Combine cream cheese, crab, green onions, garlic, Worcestershire, sugar, and salt until smooth.

Place 1 tablespoon of filling in the center of each wonton wrapper. Moisten edges with water, bring opposite corners together to form a triangle or a four-pointed star, and press to seal tightly.

Fry in 350°F oil for 2-3 minutes until golden and crisp. Drain on paper towels.
4. The Finishing Touches
