Instructions
1. Sauté the Vegetables
- Heat the olive oil in a large soup pot or Dutch oven over medium heat.
- Add the onion, carrots, and celery. Cook for 6–8 minutes, stirring occasionally, until softened.
- Stir in the garlic, thyme, oregano, smoked paprika, and red pepper flakes. Cook for 1 minute, until fragrant.
2. Simmer the Soup
- Add the potatoes, chickpeas, vegetable broth, and bay leaf.
- Bring to a boil, then reduce the heat to low.
- Cover and simmer for 20–25 minutes, or until the potatoes are fork-tender.
3. Make It Creamy
- Remove about 2 cups of the soup and blend until smooth using a blender or immersion blender.
- Stir the blended portion back into the pot to create a naturally creamy texture while keeping plenty of chunks.
4. Finish the Soup
- Stir in the spinach or kale, if using, and cook for 2–3 minutes, until wilted.
- Remove the bay leaf.
- Stir in the lemon juice, lemon zest, parsley, dill, and chives.
- Taste and season with salt and black pepper as needed.
Serve
Ladle into bowls and garnish with:
- Parmesan or feta cheese
- Extra fresh herbs
- A squeeze of lemon juice
- Red pepper flakes
- Warm crusty bread on the side
Tips
- Yukon Gold potatoes give the soup a naturally creamy texture, but russet potatoes also work well.
- Add 1 cup cooked shredded chicken for extra protein if desired.
- Stir in ½ cup heavy cream or coconut milk for an even richer soup.
- Add 1 teaspoon Dijon mustard at the end for extra depth of flavor.
- Fresh herbs should always be added at the end to preserve their bright flavor.
