Tips for the Best Salad
- Roast your own beets for the sweetest, deepest flavor, or use vacuum-packed cooked beets for convenience.
- Pat the beets dry before mixing to help prevent them from coloring the feta too much.
- Toast the walnuts or pecans in a dry skillet for 3β5 minutes to enhance their flavor.
- For the freshest taste, let the salad rest for 15β20 minutes after dressing so the chickpeas absorb the vinaigrette.
- Add the feta just before serving to keep it creamy and distinct.
