Ingredients
- 1 lb (450 g) boneless, skinless chicken breast or thighs, thinly sliced
- 4 cups broccoli florets
- 2 tbsp vegetable oil, divided
- 3 cloves garlic, minced
- 1 tsp grated fresh ginger (optional)
Sauce
- ¼ cup low-sodium soy sauce
- 2 tbsp chicken broth or water
- 1 tbsp oyster sauce
- 1 tbsp brown sugar or honey
- 1 tsp sesame oil
- 1 tbsp cornstarch
Instructions
- In a small bowl, whisk together all the sauce ingredients until smooth.
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
- Add the chicken and cook for 4–5 minutes until lightly browned and cooked through. Transfer to a plate.
- Add the remaining oil, then stir-fry the broccoli for 2–3 minutes. If you like it more tender, add 2 tablespoons of water, cover for 1 minute, then uncover.
- Stir in the garlic and ginger and cook for 30 seconds until fragrant.
- Return the chicken to the pan. Pour in the sauce and stir continuously for 1–2 minutes until the sauce thickens and coats everything.
- Serve immediately over steamed rice or noodles.
Tips
- Marinate the chicken for 15–20 minutes with 1 tablespoon soy sauce and 1 teaspoon cornstarch for extra tenderness.
- Add sliced carrots, bell peppers, mushrooms, or snap peas for more vegetables.
- Sprinkle with sesame seeds or sliced green onions before serving.
