These Chicken and Vegetable Cutlets are crispy on the outside, tender and flavorful inside, and packed with seasoned chicken and vegetables. They make a delicious appetizer, snack, lunch, or easy dinner.

Ingredients
Cutlet Mixture
- 1 lb (450 g) ground chicken (or finely minced chicken)
- 2 medium potatoes, boiled and mashed
- 1 small carrot, grated
- ½ cup peas (fresh or frozen)
- ½ bell pepper, finely chopped
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp grated ginger
- 2 tbsp chopped fresh cilantro or parsley
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- 1 tsp cumin powder
- ½ tsp chili flakes (optional)
- 1 egg
- ½ cup breadcrumbs (plus extra for coating)
For Coating
- 1 egg, beaten
- 1 cup breadcrumbs
Cooking
- Oil for shallow frying

Instructions
1. Prepare the Filling
- Heat a little oil in a pan.
- Sauté onion until softened.
- Add garlic and ginger; cook for 30 seconds.
- Add ground chicken and cook until no longer pink.
- Add carrot, peas, and bell pepper.
- Season with salt, pepper, paprika, and cumin.
- Cook until vegetables are tender.
- Let the mixture cool.
2. Make the Cutlet Mixture
In a large bowl combine:
- Cooked chicken and vegetables
- Mashed potatoes
- Cilantro or parsley
- Egg
- Breadcrumbs
Mix until everything holds together.
3. Shape the Cutlets
- Take a portion of the mixture.
- Shape into oval or round patties.
- Coat each cutlet in:

Oven-Baked:
- Bake at 400°F (200°C) for 20–25 minutes, flipping once.
