🧀🥔 Cheesy Garlic Baked Potato Slices
Crispy on the edges, tender in the center, and loaded with garlic, herbs, and melted cheese — these baked potato slices make a delicious side dish, snack, or party appetizer.
Ingredients
- 3–4 large potatoes (Russet or Yukon Gold)
- 3 tbsp olive oil or melted butter
- 3 cloves garlic, minced
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp dried oregano or Italian seasoning
- Salt and black pepper, to taste
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 2 tbsp grated Parmesan cheese
- 2 tbsp chopped fresh parsley or green onions
Instructions
1. Prepare the potatoes
- Preheat oven to 425°F (220°C).
- Wash potatoes and slice into ¼-inch thick rounds.
- Pat slices dry with paper towels for crispier edges.
2. Season
- In a bowl, combine olive oil, minced garlic, garlic powder, paprika, oregano, salt, and pepper.
- Toss potato slices in the garlic mixture until evenly coated.
3. Bake
- Arrange slices in a single layer on a parchment-lined baking sheet.
- Bake for 25–30 minutes, flipping halfway, until golden and slightly crispy.
4. Add cheese
- Sprinkle cheddar, mozzarella, and Parmesan over the potato slices.
- Return to oven for 5–8 minutes until the cheese is melted and bubbly.
5. Finish and serve
- Sprinkle with parsley or green onions.
- Serve hot with sour cream, ranch dressing, or garlic aioli.
