Ingredients
- 1½ lbs (680 g) boneless, skinless chicken breasts, cut into small ¼-inch cubes
- 1 cup shredded mozzarella cheese
- ⅓ cup grated Parmesan cheese
- 2 large eggs
- ⅓ cup mayonnaise
- ⅓ cup all-purpose flour
- 2 cloves garlic, minced
- 2 tbsp chopped fresh parsley (or 2 tsp dried parsley)
- 1 tsp onion powder
- ½ tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- 2–3 tbsp vegetable oil, for frying
Optional Garlic Herb Dip
- ½ cup sour cream or Greek yogurt
- 1 tbsp mayonnaise
- 1 clove garlic, minced
- 1 tbsp chopped parsley or dill
- 1 tsp lemon juice
- Salt and pepper, to taste
Instructions
1. Prepare the Chicken
Cut the chicken into very small cubes (about ¼ inch). Pat dry with paper towels.
2. Make the Batter
In a large bowl, combine:
- Eggs
- Mayonnaise
- Flour
- Garlic
- Mozzarella
- Parmesan
- Parsley
- Onion powder
- Paprika
- Salt
- Pepper
Fold in the diced chicken until everything is evenly coated.
3. Chill (Optional but Recommended)
Cover and refrigerate for 20–30 minutes. This helps the mixture hold together and improves the texture.
4. Cook the Fritters
Heat the oil in a large nonstick skillet over medium heat.
Drop about 2 tablespoons of the mixture per fritter into the skillet. Flatten slightly with the back of a spoon.
Cook for 4–5 minutes per side, or until golden brown and the chicken reaches an internal temperature of 165°F (74°C).
Transfer to a paper towel-lined plate.
5. Make the Dip
Stir together all the dip ingredients until smooth.
6. Serve
Serve the fritters hot with the garlic herb dip and your favorite sides, such as:
