Cheesy Beef Puff Pastry Pockets
The secret is layering the filling so the cheese melts into the beef, and folding the pastry to create perfect, sealed pockets that bake up crispy and gorgeous.
Ingredients (Makes 8 Pockets)

1 lb (450g) lean ground beef

1 small onion, finely diced

3 garlic cloves, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon dried oregano

½ teaspoon salt, plus more to taste

¼ teaspoon black pepper

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

4 oz (115g) cream cheese, softened (this makes it incredibly creamy)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

2 sheets frozen puff pastry, thawed according to package instructions

1 egg, beaten with 1 tablespoon water (for egg wash)

1 teaspoon sesame seeds or everything bagel seasoning (optional)

Fresh parsley, chopped, for garnish

Cook the Beef Filling: In a large skillet over medium-high heat, brown the ground beef, breaking it up with a spoon. When it’s about halfway cooked, add the diced onion and cook for 4-5 minutes until the onion is soft and the beef is fully browned. Drain any excess grease.

Season and Bind: Reduce the heat to medium. Add the minced garlic, smoked paprika, cumin, oregano, salt, and pepper. Stir and cook for 1 minute until fragrant. Add the tomato paste and Worcestershire sauce, stir to combine, and cook for 2 more minutes. Remove the skillet from the heat.

Make It Cheesy: While the beef is still hot, add the softened cream cheese, shredded cheddar, and half of the mozzarella. Stir vigorously until everything is melted into a cohesive, creamy, cheesy beef mixture. The cream cheese is what gives it that gorgeous, slightly tangy richness. Let the filling cool to room temperature.

Prep the Pastry: Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper. Unfold one thawed puff pastry sheet on a lightly floured surface. Gently roll it just to smooth the seams, then cut it into 4 even rectangles. Repeat with the second sheet.

Fill and Fold: Place a generous 2-3 tablespoons of the cooled beef filling onto the center of each pastry rectangle, leaving a clear border. Top the filling with a small pinch of the remaining mozzarella. Brush the edges of the pastry with the egg wash. Fold the pastry over the filling to create a triangle or rectangle pocket, depending on the shape of your dough. Press the edges firmly to seal, then crimp with a fork.

Egg Wash and Vent: Transfer the pockets to the prepared baking sheets. Brush the tops generously with the egg wash. Using a sharp knife, cut 2-3 small slits in the top of each pocket for steam to escape. Sprinkle with sesame seeds or everything bagel seasoning if using.

Bake to Golden Glory: Bake for 18-22 minutes, until the puff pastry is deeply golden brown, dramatically puffed, and absolutely flaky. The cheese might bubble out a tiny bit from the vents — that’s a good sign.

Rest and Serve: Let the pockets cool on the baking sheet for at least 5 minutes before serving. The filling will be molten hot. Garnish with fresh parsley and serve with a dipping sauce like sour cream with lime, spicy ketchup, or a garlic yogurt sauce.
These freeze incredibly well. Simply assemble the unbaked pockets on a tray, freeze solid, then transfer to a bag. Bake from frozen, adding 5-8 extra minutes to the cook time.
