Ingredients
Salad
- 2 cans (15 oz / 425 g each) cannellini or great northern beans, drained and rinsed
- 1 large head romaine lettuce, chopped
- 1 cup cherry tomatoes, halved (optional)
- ½ cup shaved or grated Parmesan cheese
- 1 cup homemade or store-bought croutons
- 2 tbsp chopped fresh parsley
- Freshly ground black pepper
Greek Yogurt Caesar Dressing
- ½ cup plain Greek yogurt
- 2 tbsp grated Parmesan cheese
- 1 tbsp lemon juice
- 1 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- 1–2 cloves garlic, minced
- 1 tbsp olive oil
- 2–3 tbsp water (to thin, if needed)
- Salt and black pepper, to taste
Optional: For a more traditional Caesar flavor, add 1–2 finely mashed anchovy fillets or 1 teaspoon anchovy paste to the dressing.
Instructions
- Make the dressing.
- Whisk together the Greek yogurt, Parmesan, lemon juice, Dijon mustard, Worcestershire sauce, garlic, olive oil, salt, and pepper.
- Add water a little at a time until the dressing reaches your desired consistency.
- Assemble the salad.
- In a large serving bowl, combine the beans, romaine, cherry tomatoes (if using), and parsley.
- Dress the salad.
- Pour the dressing over the salad and toss gently to coat everything evenly.
- Finish.
- Top with Parmesan cheese, croutons, and a generous grind of black pepper.
- Serve immediately.
