- 1 large egg
- ½ cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Pinch of nutmeg (optional)
Lasagna
- 12 lasagna noodles (regular or oven-ready)
- 3 cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
Creamy Sauce
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2½ cups milk
- 2 cloves garlic, minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup Parmesan cheese
Instructions
1. Roast the Butternut Squash
- Preheat oven to 400°F (200°C).
- Toss squash cubes with olive oil, salt, pepper, sage, and garlic powder.
- Spread on a baking sheet.
- Roast for 25–30 minutes until tender.
- Mash with a fork or blend until smooth.
2. Prepare the Spinach Filling
Mix together:
- Ricotta
- Egg
- Parmesan
- Spinach
- Parsley
- Salt
- Pepper
- Nutmeg
Set aside.
3. Make the Creamy Sauce
- Melt butter in a saucepan over medium heat.
- Add garlic and cook for 30 seconds.
- Whisk in flour and cook for 1 minute.
- Slowly whisk in milk.
- Cook until slightly thickened, about 5 minutes.
- Stir in Parmesan, salt, and pepper.
4. Assemble the Lasagna
