🫑 Stuffed Pepper Soup
A warm, hearty Stuffed Pepper Soup with ground beef, colorful bell peppers, tomatoes, and rice. It has all the comforting flavors of classic stuffed peppers in an easy one-pot meal.
Ingredients
- 1 lb (450 g) ground beef (or ground turkey)
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 bell peppers (red, green, and yellow), diced
- 3 cloves garlic, minced
- 1 can (15 oz/425 g) diced tomatoes
- 1 can (15 oz/425 g) tomato sauce
- 4 cups beef or chicken broth
- 1 tsp Italian seasoning
- 1 tsp paprika
- ½ tsp dried oregano
- Salt and black pepper, to taste
- 1 cup cooked white or brown rice
- 1 tbsp Worcestershire sauce (optional)
- 1 cup shredded cheddar or mozzarella cheese (optional, for serving)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the ground beef and cook until browned, breaking it into small pieces. Drain any excess fat.
- Stir in the onion and bell peppers. Cook for 5–7 minutes until softened.
- Add the garlic and cook for 30 seconds.
- Mix in the diced tomatoes, tomato sauce, broth, Italian seasoning, paprika, oregano, Worcestershire sauce (if using), salt, and pepper.
- Bring to a boil, then reduce the heat and simmer for 20–25 minutes.
- Stir in the cooked rice and cook for another 5 minutes until heated through.
- Taste and adjust the seasoning if needed.
- Ladle into bowls and top with shredded cheese and fresh parsley, if desired.
