🧈 Southern Buttermilk Biscuits

Ingredients
- 2½ cups (315 g) all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 8 tablespoons (113 g) cold unsalted butter, cubed
- 1 cup (240 ml) cold buttermilk
- 2 tablespoons melted butter, for brushing (optional)
Instructions
1. Prepare the Dough
- Preheat oven to 450°F (230°C).
- Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- Cut in the cold butter using a pastry cutter or fingertips until the mixture resembles coarse crumbs with pea-sized butter pieces.
- Pour in the cold buttermilk and gently stir until just combined. Do not overmix.
2. Shape the Biscuits
- Turn dough onto a lightly floured surface.
- Gently fold the dough over itself 4–5 times to create layers.
- Pat dough to about ¾-inch (2 cm) thick.
- Cut biscuits using a round cutter (do not twist the cutter).
- Place biscuits close together on the baking sheet for softer sides or spaced apart for crispier edges.
3. Bake
- Bake for 12–15 minutes until tall and golden brown.
- Brush with melted butter while warm.
- Serve immediately.
