Pork
- 1 whole pig (traditional) or 2β3 kg pork belly/shoulder for a smaller version

- 10 cloves garlic, crushed

- 2 onions, quartered

- Β½ cup evaporated milk or coconut milk

- 2 tbsp soy sauce
- 1 tbsp brown sugar

1. Marinate the Pork
- Score the pork skin lightly.
- Rub meat side with salt, pepper, garlic, soy sauce, and calamansi juice.
- Place lemongrass, onions, and bay leaves inside or on top.
- Refrigerate for 8β24 hours.
2. Roast Slowly
- Preheat oven to 160Β°C (320Β°F).
- Place pork skin-side up on a rack.
- Roast for 2Β½β3Β½ hours until tender.
- Brush with basting mixture every 30 minutes.
3. Crisp the Skin
- Increase heat to 220Β°C (425Β°F) for 15β25 minutes.
- Roast until the skin is deep golden and crispy.
- Rest for 10β15 minutes before slicing.
