Instructions
1. Bake the Cake Layers
- Preheat oven to 350°F (175°C).
- Grease and flour three 8-inch cake pans and line bottoms with parchment.
- Whisk flour, baking powder, and salt together.
- Beat butter and sugar for 3–4 minutes until light and fluffy.
- Add eggs one at a time, then mix in vanilla.
- Add flour mixture alternately with milk and sour cream, beginning and ending with flour.
- Divide batter evenly among pans.
- Bake for 25–30 minutes, until a toothpick comes out clean.
- Cool completely before frosting.
2. Make the Caramel Frosting
- In a heavy saucepan, combine granulated sugar, brown sugar, cream, butter, and salt.
- Cook over medium heat, stirring often, until the mixture reaches about 235°F (113°C) or soft-ball stage.
- Remove from heat and add vanilla.
- Let cool for 5–10 minutes.
- Beat the frosting with a mixer or wooden spoon until it thickens and becomes spreadable.
3. Assemble the Cake
- Place one cake layer on a serving plate.
- Spread a layer of caramel frosting over the top.
- Repeat with remaining layers.
- Cover the top and sides with the remaining caramel frosting.
- Allow the cake to set before slicing.
