Ingredients

- 1 cup (220 g) packed brown sugar
- ½ cup (100 g) granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2¾ cups (345 g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon cornstarch (optional, for softer cookies)
- 1½ cups chopped pecans, lightly toasted
- 1 cup toffee bits
- ½ cup white chocolate chips (optional)
Instructions
1. Prepare the Dough
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Toast pecans in a dry skillet over medium heat for 3–5 minutes until fragrant. Cool.
- Beat butter, brown sugar, and granulated sugar until light and creamy, about 2–3 minutes.
- Add eggs one at a time, then mix in vanilla.
- In another bowl, whisk together flour, baking soda, salt, and cornstarch.
- Gradually mix dry ingredients into the wet mixture until just combined.
- Fold in toasted pecans and toffee bits.
2. Chill & Bake
- Chill dough for 30 minutes for thicker cookies (recommended).
- Scoop dough into 2-tablespoon-sized balls and place on baking sheets.
- Bake for 10–12 minutes until edges are golden and centers are slightly soft.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
