For the Chicken Drumsticks
- 8–10 chicken drumsticks
- 2 cups buttermilk (or milk + 1 tbsp lemon juice)
- 2 tsp salt
- 1 tsp black pepper
- 2 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp cayenne pepper (optional)
- 2 cups all-purpose flour
- ½ cup cornstarch (for extra crispiness)
- 1 tsp baking powder
- 1 tsp paprika
- 1 tsp garlic powder
- Oil, for frying
For the French Fries
- 4 large potatoes, cut into fries
- Cold water, for soaking
- Salt
- Oil for frying or baking
Dipping Sauces
Creamy Garlic Sauce
- ½ cup mayonnaise
- 2 tbsp sour cream
- 1 garlic clove, minced
- 1 tbsp lemon juice
- Salt & pepper
Spicy Sauce
- ½ cup mayonnaise
- 2 tbsp hot sauce
- 1 tbsp ketchup
- ½ tsp paprika
To Serve
- Crinkle-cut dill pickles
- Lemon wedges (optional)
- Fresh parsley (optional)
👨🍳 Instructions
1. Marinate the Chicken
- Wash and pat dry the drumsticks.
- Mix buttermilk with salt, pepper, paprika, garlic powder, onion powder, and cayenne.
- Add chicken and refrigerate for at least 2 hours (overnight gives the best flavor).
2. Prepare the Crispy Coating
- Mix flour, cornstarch, baking powder, paprika, garlic powder, salt, and pepper.
- Remove drumsticks from marinade and coat thoroughly in the flour mixture.
- For extra crunch, dip back into buttermilk and coat again.
3. Fry the Chicken
- Heat oil to 175°C / 350°F.
- Fry drumsticks in batches for 12–15 minutes, turning occasionally.
- Cook until golden brown and the internal temperature reaches 74°C / 165°F.
- Drain on a wire rack or paper towels.
4. Make the Fries
- Soak cut potatoes in cold water for 30 minutes.
- Drain and dry well.
- Fry once at 160°C / 320°F for 4–5 minutes.
- Fry again at 190°C / 375°F until golden and crispy.
- Season with salt.
5. Assemble the Platter
Arrange:
- Crispy chicken drumsticks 🍗
- Golden French fries 🍟
- Crinkle-cut pickles 🥒
- Garlic sauce and spicy dipping sauce
