Braising Liquid

Instructions
1. Prepare and Sear the Lamb
- Preheat oven to 325Β°F (165Β°C).
- Pat lamb shanks dry and season generously with salt and pepper.
- Heat olive oil in a large Dutch oven over medium-high heat.
- Sear lamb shanks on all sides until deeply browned, about 8β10 minutes.
- Remove lamb and set aside.
2. Build the Flavor Base
- Add onion, carrots, and celery to the pot.
- Cook for 5β7 minutes until softened.
- Add garlic and cook for 30 seconds.
- Stir in tomato paste and cook for 1 minute.
3. Braise the Lamb
- Pour in red wine and scrape up browned bits from the bottom.

- Return lamb shanks to the pot.
