Ingredients
Soup Base

- 1 lb (450 g) kielbasa sausage, sliced
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, diced
- 2 tbsp tomato paste
- 6 cups chicken or beef broth
- 1Β½ lbs (680 g) potatoes, peeled and cubed
- 2 cups sauerkraut, drained and roughly chopped
- 1 cup sauerkraut juice (optional, for extra tang)
Seasonings
- 2 bay leaves
- 1 tsp dried marjoram (traditional)
- 1 tsp smoked paprika
- Β½ tsp caraway seeds (optional)
- Β½ tsp black pepper
- Salt, to taste
- 2 tbsp fresh dill or parsley, chopped
Instructions
1. Brown the Sausage
- Heat butter or oil in a large soup pot over medium heat.
- Add sliced kielbasa and cook for 4β5 minutes until lightly browned.
- Remove sausage and set aside.
2. Cook the Vegetables
Add onion, carrots, and celery to the same pot.
Cook for 5β7 minutes until softened.
Add garlic and cook for another 30 seconds.
3. Build the Soup
Stir in tomato paste and cook for 1 minute.
Add:
- Broth
- Potatoes
- Sauerkraut
- Sauerkraut juice (if using)
- Bay leaves
- Marjoram
- Smoked paprika
- Caraway seeds
- Black pepper
Return the kielbasa to the pot.
4. Simmer
Bring to a boil, then reduce heat.
Cover and simmer for 45β60 minutes, until:

Remove bay leaves before serving.
