Ingredients
Cauliflower
- 2 large heads of cauliflower
- 3 tbsp olive oil
- 2 tbsp melted butter (optional)
- 3 cloves garlic, minced
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp dried Italian seasoning
- ½ tsp onion powder
- 1 tsp kosher salt
- ½ tsp freshly ground black pepper

Instructions
1. Preheat the Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
2. Slice the Cauliflower
- Remove the outer leaves.
- Trim the stem just enough so the cauliflower sits flat, keeping the core intact.
- Slice each head into ¾- to 1-inch-thick steaks. The center slices hold together best. Save any loose florets to roast alongside the steaks.
3. Season
In a small bowl, combine:
- Olive oil
- Melted butter (if using)
- Garlic
- Garlic powder
- Smoked paprika
- Italian seasoning
- Onion powder
- Salt
- Pepper
Brush both sides of each cauliflower steak generously with the seasoning mixture.
4. Roast
- Arrange the steaks in a single layer on the prepared baking sheet.
- Roast for 15 minutes.
- Carefully flip and roast for another 15–20 minutes, until the edges are browned and the centers are tender.
5. Finish
If using Parmesan, sprinkle it over the steaks during the last 5 minutes of roasting.
